Recipe: Butter-fried flatbread with goat cheese
We’ve said it before, and we say it again: there is no such thing as ‘too many’ food tips! So, here’s one from our Lundhags friend Lena Flaten on luxurious and simple food (which doesn’t require an open fire) to bring on the trip.
Take a flatbread or similar bread, crumble a few slices of a local goat cheese on ¼ of the bread, and click a few teaspoons of jam (eg cloudberry) over the cheese. Then roll up the bread and fry it in a frying pan with butter or a neutral oil at medium temperature until it has a nice golden brown color. Allow the rolls to cool properly before packing them. Make a thermos with really good coffee.
